This week’s chef notes:

  • Basmati Rice, Roti and or Flatbread are sides to go along with the Blistered Tomato Daal. Choose whichever you prefer, or skip entirely.

  • Short Pasta includes shapes like rigatoni, penne, or fusilli that can typically be eaten in 1-2 bites.

  • Urad daal (black gram) is a protein-rich lentil often used in Indian cooking. It adds a creamy texture when cooked; if unavailable, substitute with split mung beans or red lentils.
