Feel free to substitute queso fresco or feta for the cotija, or skip it if you want a dairy free dish (chicken with watermelon salad).
You can serve quinoa, white rice, or couscous in place of the brown rice if you’d prefer.
To save time this week, you can sub your favorite green salsa for the following ingredients: 1 onion, tomatillos, 3 cloves garlic, and 1 lime.
