This week’s chef notes:

  • Feel free to substitute queso fresco or feta for the cotija, or skip it if you want a dairy free dish (chicken with watermelon salad).

  • You can serve quinoa, white rice, or couscous in place of the brown rice if you’d prefer.

  • To save time this week, you can sub your favorite green salsa for the following ingredients: 1 onion, tomatillos, 3 cloves garlic, and 1 lime.
