This week’s chef notes:

  • We are calling for canned tomatoes in two recipes this week, pasta and chilaquiles. To avoid buying 2 cans and having leftover tomatoes, just use 5 oz from the can for the chilaquiles, and save the rest for the pasta dish!

  • The pasta dish has 2 types of mozzarella: fresh and aged or dry mozzarella. Whole milk Mozzarella is best for the dry/aged portion. Avoid buying the pre-shredded mozzarella, as it is usually coated in an anti-caking agent that prevents it from melting smoothly.

  • Lastly, you can skip making the sauce for the Chilaquiles if you want to simplify things. This includes the dried chiles, 5 oz of the canned tomatoes, and 2 of the garlic cloves.
