Spring Cobb Salad
This is a fresh and vibrant twist on the classic, featuring crisp greens, tender asparagus, sweet peas, radishes, hard-boiled eggs, avocado, and crumbled bacon, all drizzled with a light herb vinaigrette.

Chef Notes: I love to cook bacon on a sheet tray. I cook the whole pack and use it throughout the week.
You can sub bleu cheese/sheep's feta for the goat cheese if you’d like.

Make 7 Minute Eggs▸
Render the bacon:
Heat the oven to 375°F.
Line a sheet tray with parchment, then lay the bacon flat on the parchment.
Cook bacon for 10-15 minutes, or until the fat has rendered and one side has begun to brown. Flip the bacon pieces over and continue to cook for another 5-10 minutes or until the bacon fat has rendered and the bacons golden.
Remove from the oven and allow to cool.
Roast the Chicken Breast:
Heat the oven to 375°F.
Season the chicken with ½ lemon's worth of juice, salt and pepper. Roast on a sheet tray until the internal temperature has reached 160°F.
Allow to cool.
Prepare the vegetables:
Pick and/or chop the herbs.
Slice the radish thin.
Trim the asparagus into 2" segments. Blanch and shock▸
Crumble the goat cheese using your hands to get desired size pieces.
Make the vinaigrette:
Mince 1 T of shallot.
Combine with ¼ C olive oil, 2 t honey, ½ t dijon, 2 t champagne vinegar and ½ t freshly ground black pepper.
Whisk or shake vigoriously in a mason jar to emulsify.
Finish
Dress the greens in the viniagrette.
Season the greens with a pinch of salt followed by the emulsified vinaigrette.
Massage the dressing into the greens, tasting and adding more vinaigrette, salt or black pepper as needed.
Dice the avocado.
Add the herbs, radish and peas/asparagus to the greens and toss ligthly.
Divide the green amongst 2 bowls.
Top with a 7 minute egg, bacon bits, crumbled goat cheese, diced avocado and sliced chicken thigh.
