Vietnamese Pork Skewers (Bun Thit)

Use the greens as lettuce boats to eat.
You can substitute chicken thighs for the pork.

Pork Shoulder
Bun Thit Marinade

Soak wooden skewers in a shallow dish of water.
Marinate the Pork:
Cut the pork into 2" pieces.
Mince 4 garlic cloves and the shallot and combine with 2 T sugar, 1 T fish sauce, 2 t soy sauce and 3 T oil.
Pour over the pork and allow to sit for at least 30 minutes or up to 24 hours.
Skewer the pork pieces onto the soaked wooden skewers.
Prepare the Rice Noodles: Soak the noodles in hot water or quickly blanch and shock the noodles, according to the directions on the package. Once tender, remove the noodles from the water and toss in oil to prevent from sticking. The noodles will be served cold/room temperature.
Prepare the Veggies and Herbs: Clean and trim the greens. Pick the herbs. Slice the cucumber.
Toast the Peanuts▸ Toast the peanuts in the oven until golden brown. Roughly chop.
Make Nuoc Cham: Dissolve 2 T sugar in 6 T hot water. Mince the garlic cloves, slice the serrano/jalapeno and combine with sugar water, 2 T fish sauce and 2-3 T lime juice.
Finish
Remove the skewers from the marinade. On the grill, on a large skillet on the stove or under the broiler, grill/sear/broil the skewers, turning occasionally to brown evenly on all sides until lightly charred and cooked through.
Test the temp of the pork using a thermometer to 135°F and allow to rest for 5 minutes.
Plate the skewers with the rice noodles, lettuce, herbs, cucumber and peanuts.
Assemble: Using the greens as a lettuce wrap, fill with your preferred selection of noodles, pork, cucumber, herbs and peanuts.
Drizzle with nuoc cham and enjoy!
