Black Garlic Caesar Salad

This twist on the classic Caesar features rich black garlic in the dressing, adding depth and umami flavor. Top it with crispy roast chicken for a hearty and nutritious salad option.

Components

  • Romaine & Radicchio

  • Garlic Panko Crumbs

  • Black Garlic Caesar Dressing

  • Parmigiana

  • Roasted Chicken Thigh, if using



Mise

Clean and prepare the salad greens.

Prepare the garlic panko crumb.

Prepare the black garlic caesar dressing: In a small chopper or with an immersion blender, combine the egg yolk, ½ t dijon, 1 oz black garlic cloves, 2 T lemon juice, 2 anchovies and a pinch of salt. Process until the ingredients are smooth. Slowly stream in 1 C of oil while blending constantly to emulsify. Season with salt, black pepper and parmigiana to taste.

Prepare Optional Protein: If adding roast chicken, season and roast the chicken in the oven. (425 for about 20 min). Let cool then slice.

Finish

Dress the romaine and radicchio in the black garlic caesar dressing. 

Divide the salad amongst bowls.

Top with parmigiana reggiano, panko crumb, and chicken thighs, if using.
